I just recently started enjoying chia seed pudding as an afternoon snack and wanted to create a matcha version that is perfect for an energy boost after a long day. This recipe is super simple but filled with omega-3s and vitamins.
- 1 tsp of matcha powder
- 1 cup of almond milk
- 2 tbsp of chia seeds
- 1/2-1 tbsp of honey
- Whisk matcha powder and 1tbsp of almond milk in a small bowl.
- Once fully blended (and when there are no more matcha clumps) add in the remaining milk and whisk till blended.
- Add in chia seeds and honey, stirring until the chia seeds are fully blended.
- Leave in the refrigerator for 2+ hours until the texture is thick.
The chia pudding is perfect as a topping on yogurt and smoothie bowls, but it is just as tasty on its own! I had mine with banana, berries, goji berries, cacao nibs, and coconut.
